Last Friday night I was in charge of providing nibbles for 20 for a party.  Others brought the salads, desserts, drinks and meat.  Well, I made quite a few things and it didn’t take much effort at all.  I’m a big fan of maximum effect for minimum effort.  There were 2 dishes in particular that had the party-goers impressed and wanting more.  The first was…

Slow-Roasted Tomatoes

Slice 6 Roma tomatoes lengthways.  Lay on baking paper-covered oven trays.  Drizzle with a little olive oil.  Sprinkle with chopped basil and coarse sea salt.  Cook in a moderate oven for 50 minutes to an hour.  The time will depend on how thick the slices are.  Allow to cool and store in an airtight container in the fridge for up to 3 days.
